[ gooey nutella banana bread ]

There are few things I love more than Nutella, and as far as delicious combinations go, banana and Nutella is one of the best….so, add the word “gooey” and it doesn’t get any better than this, I promise you! I literally cannot describe how deliscious this is….every time I’ve made it, it’s been gone in less than 24 hours (and with only 2 or 3 people eating it), so yeah…’nuff said!
(It’s not the most elegant of cakes, but that’s part of the appeal in my opinion)

Gooey Nutella Banana Bread:

Ingredients:

  • 1 cup flour
  • 1/4 + 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1/8 cup unsalted butter (1/4 stick, 28 grams)
  • 1/2 cup sugar
  • 1 egg
  • 1 large banana mashed (approximately 1/2 cup)
  • 2.5 tablespoons milk
  • 1/2 tsp vanilla
  • 1/4 cup + 1/8 cup nutella

Directions:

Preheat oven to 350 degrees.

In a medium bowl, whisk flour, baking soda and salt. In a large bowl, beat butter and sugar until blended. Add eggs one at a time, and beat after each addition. Add vanilla, milk and banana. Beat until mixed. Add flour mixture and beat unil blended.

Spoon the nutella into a seperate bowl (soften in the microwave if needed. The nutella should be easy to mix, but not liquid). Add 1/2 cup of the banana batter into the nutella and mix until blended.

Spoon plain batter and nutella batter alternately into a loaf tin (I usually get 2 layers of plain batter, with one layer of nutella inside), and swirl with a knife or a fork to give it a marblized look. Bake for 25-30 minutes.

Don’t worry if the inside doesn’t seem fully baked after 30 mins….the Nutella layer will never fully bake, and besides, it’s supposed to be gooey! As long as the top has gotten golden brown, you know it’s done.

Happy Eating!

  1. Hi, what flour do you use and also it says 1 egg on your list but in your instructions it says add one egg at a time. How many will i need? Can’t wait to try it

    • I used all purpose flour. What I meant by add one egg at a time was if you wanted to double the recipe and make more than one tin, you would use more than one egg (and in that case, add one at a time). But for the exact recipe that I’ve given, its only 1 egg for 1 tin. Sorry for not being more clear about that!
