[ blueberry banana french toast ]

The perfect breakfast for when you’re short on time but want to impress someone (or just treat yourself!). Feel free to vary the combination of berries and fruit until you find a combination you love best.

Ingredients: (makes 1 serving)

  • 1 small banana
  • handful of blueberries
  • 1 egg
  • 1 tablespoon sugar
  • 1/4 teaspoon vanilla essence
  • 2 slices of bread
  • optional: maple syrup, icing sugar, whipped cream or Greek yoghurt

Directions:

Chop the banana and mash it up in a bowl. Add blueberries to it and mix.

In a separate bowl, add the egg, sugar and vanilla and beat with a fork. Use a wide, shallow bowl so it is easier to dip your bread into. Soak both slices of bread in the egg mixture, for about 15-20 seconds on each side, or until it gets soaked through.

Let the extra mixture drip off and place the bread slice on a plate. Once both slices are soaked in the egg mixture, spread your banana and blueberry mixture on one of the slices, leaving a little gap around the edges (if you have extra fruit mixture, save it as a topping for your french toast, but don’t try to overload your sandwich because it will all fall out when you try to cook it). Press the other bread slice on top of it to make your sandwich.

In a pan, melt some butter (or you can use cooking spray), and toast your sandwich for a couple of minutes on each side until it is a light golden brown.

I served mine with the leftover fruit mixture, a little powdered sugar and some maple syrup but you can also try it with whipped cream. Delish!
