A while ago, I posted a recipe for gooey nutella banana bread, which while super delicious, is slightly cumbersome to make. I recently modified the recipe to make cupcakes/muffins instead and they turned out AMAZING! Even better than the bread version, and easier to make. I’m re-posting the modified recipe here, and for those who still want to make the bread version, make sure to check out my earlier post.
Gooey Nutella Banana Muffins:
Ingredients: (Makes 12 muffins)
- 1 cup flour
- 1/4 + 1/8 tsp baking soda
- 1/4 tsp salt
- 1/8 cup unsalted butter (1/4 stick, 28 grams)
- 1/2 cup sugar
- 1 egg
- 1 large banana, mashed
- 2.5 tablespoons milk
- 1/2 tsp vanilla
- 1/4 + 1/8 cup Nutella
Preheat oven t0 350 degrees F.
In a medium bowl, mix flour, baking soda and salt. In a large bowl, beat butter and sugar until blended. Add egg and beat (if increasing the recipe and using more eggs, add one egg at a time and beat after each one). Add vanilla, milk and banana, and beat until mixed. Add flour mixture and mix until blended thoroughly.
Add the Nutella (amount can be adjusted depending on your preference), and just swirl it through the batter with a spoon. You don’t want to mix it thoroughly otherwise you won’t get a marbled effect.
Pour into muffin tin, and bake for 15-18 minutes or until the tops are firm to touch. Just like with the bread, don’t worry if the inside doesn’t seem completely solid when you do the toothpick test….you want this to be gooey.
