I discovered Dulce de Leche a few years ago, and it has since made regular appearances in my cupcakes. What is Dulce de Leche you ask? It’s basically a South America version of caramel, made from condensed milk (or just regular milk), and it is DELICIOUS! I find normal caramel way too sweet, and generally avoid it all costs, but since Dulce de Leche is milk based, it isn’t nearly as sugary sweet (which I promise, is a good thing).
I had the good fortune of visiting Argetina last year and stocked up on jars of the good stuff, but you can also make your own dulce de leche at home (I’ve never made it myself, so I can’t recommend a recipe, but there are plenty of options online that use either whole milk or condensed milk).
Chocolate Dulce De Leche Cupcake Recipe: (original recipe found here)
The cupcakes are extremely light and fluffy, so if you like a denser chocolate cake, you might want to try a different recipe ( and just add in about1/3-1/2 cup of dulce de leche).
Ingredients: (Makes 15-18)
- 1/2 cup boiling water
- 1/2 cup + 2 tablespoons unsweetened cocoa powder
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 1/2 cup + 2 tablespoons dark brown sugar
- 1/2 cup + 2 tablespoons granulated sugar
- 2 large eggs
- 1 c all-purpose flour
- 1/2 + 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup dulce de leche
Preheat oven to 350 degrees F.
In a bowl, whisk the boiling water into cocoa until smooth and whisk in milk and vanilla extract. In a large bowl, beat together butter and sugars until light and fluffy, about 2 to 3 minutes, and beat in eggs, 1 at a time, beating well after each addition. Into another bowl, sift together flour, baking soda, and salt and add to egg mixture in batches alternately with cocoa mixture, beginning and ending with flour mixture, and beating well after each addition. Stir in the dulce de leche. Fill each wrapper slightly more than 1/2 way. They will rise a lot. Bake for 18 – 20 minutes.
Just drizzle/spread more dulce de leche on top!
The only problem with these cupcakes is that the dark chocolate makes it impossible to see the cute cupcake wrappers(Actually, I have this problem with almost all my cupcakes, so if anyone has a suggestion please let me know!)
